The four spec parameters that define cacao powder
When you request a cacao powder quote, you will typically see numbers around four parameters: fat content, particle size, alkalinization status, and microbio + heavy-metal compliance. Get these four right and your formulation will work consistently across lots. Get any one wrong and you will see lot-to-lot variability that derails your QA process.
1. Fat content (10/12% vs 20/22%)
Cacao powder is the dry solids that remain after cacao butter has been pressed out of cacao mass. The two industry standards are:
- 10/12% fat (low-fat): the standard for most baking, confectionery and supplement applications. More cacao butter has been extracted, leaving a drier, more easily dispersible powder.
- 20/22% fat (high-fat): retains more cacao butter, giving richer mouthfeel and color but tougher to disperse in cold water. Used in premium drinking chocolate, ice cream bases, and high-end baking applications.
For supplement capsules, low-fat is almost always the right call — less risk of oxidation and longer shelf life. For functional beverages, high-fat delivers a creamier sensory experience.
2. Particle size / mesh (80–200 mesh range)
Particle size is measured in mesh (US Standard Sieve Series). Higher mesh number = finer particles. Standard ranges for cacao powder:

Natural cacao powder is acidic (pH 5–6) and slightly bitter. Dutch-processing (alkalinization) raises the pH to 7–8.5, darkening the color and softening the flavor. The choice depends on:
- Natural: preserves more antioxidants and flavanols, lighter brown color, more pronounced cacao flavor — preferred for clean-label and „raw“ positioning.
- Dutch-processed: deeper color, smoother flavor, better solubility in water — preferred for beverages and baking where uniform color is critical.
If your product carries „antioxidant“ or „flavanol“ claims, choose natural. If your priority is visual consistency in a finished food product, choose Dutch-processed.
4. Microbio + heavy metals (the regulatory teeth)
This is where most cacao powder buyers get burned. Cacao plants accumulate cadmium (Cd) and lead (Pb) from soil, with significant variation by origin. EU Regulation 488/2014 and California Proposition 65 set the strictest enforceable limits:

For US distribution to California, your finished-product label dosing must keep total daily exposure below the Prop 65 limits. For EU distribution, your incoming lot COA must show compliance with Regulation 488/2014. We test every lot at an accredited third-party laboratory and provide signed COAs.
Microbiological panel — the standard list
Expect the following standard microbiological panel on every COA:
- Total aerobic count: < 10,000 CFU/g
- Yeast and molds: < 500 CFU/g
- Coliforms: < 10 CFU/g
- E. coli: negative / 10 g
- Salmonella: negative / 25 g
- Staphylococcus aureus: < 100 CFU/g
Specify these on your purchase order and confirm them on the COA before paying the balance.
Specifying organic certification correctly
For organic cacao powder, specify the destination market’s standard explicitly:
- USA: USDA NOP (National Organic Program). Certificate by an accredited USDA NOP certifying agent.
- European Union: EU Regulation 2018/848. Certificate by an EU-accredited control body.
- Japan: JAS Organic. Certificate by a MAFF-accredited body.
- Canada: COR (Canada Organic Regime). Equivalency agreements with USDA NOP and EU.
If you ship to multiple markets, dual or triple certification (USDA + EU at minimum) is standard for Peruvian cacao exporters.

- Variety (Criollo, Forastero, Trinitario, CCN-51, or blend)
- Fat content (10/12% or 20/22%)
- Particle size (mesh range)
- Alkalinization (natural or Dutch-processed)
- Cadmium and lead limits (with destination-market reference)
- Microbiological panel limits
- Organic certification (NOP / EU / JAS / COR)
- Region of origin (San Martín, Junín, Amazonas, Cusco)
- Packaging (25-kg multi-wall paper bag with PE liner, or 1-MT super sack)
- Incoterms (FOB Callao, CIF, DAP)
